Broccoli quiche

In the kitchen of Tenuta Torciano, we like to prepare dishes with seasonal ingredients, harvested in our garden. This week, among many harvested vegetables, we decided to cook a quiche with broccoli. This recipe is easy, fast and delicious.

  • Broccoli: 600 grams;
  • Cheese spread: 25 g;
  • Eggs: 2;
  • Cream: 200 ml;
  • Grated pecorino cheese: 50 g;
  • Puff pastry;
  • Garlic: 1 clove;
  • Salt: to taste;
  • Black pepper: to taste;
  • Extra virgin olive oil 3 tablespoons.

Procedure:

First, wash and dry the broccoli. Put on a pot of water, boil the water, and boil the broccoli for about 5 minutes. Climbing the broccoli and set aside. In a pan pour 3 tablespoons extra virgin olive oil and add a clove of ease, then add the broccoli. Add salt and sauté in pan. Cook the broccoli for about 10 minutes over high heat with the lid.

Meanwhile, in a bowl, beat the eggs with the cream cheese, cheese, salt, pepper and cream. When the mixture is homogeneous, add also the broccoli. Mix well. With the pastry, line a baking sheet. Prick the bottom with a fork and pour the mixture.

Bake the quiche with broccoli at 200 degrees for about 40 minutes. Let cool slightly and serve warm.
