Vin Brulé

Servings: 4–6 Preparation Time: 10 minutes Cooking Time: 15 minutes

Ingredients

  • 1 liter full-bodied red wine
  • 2 cinnamon sticks
  • 200 g sugar (adjust to taste)
  • 8 whole cloves
  • Zest of 1 lemon (preferably organic)
  • Zest of 1 orange (preferably organic)
  • 1/2 teaspoon freshly grated nutmeg
  • 1 star anise

Instructions

 

Prepare the Aromatics

In a saucepan, add the lemon and orange zest, cloves, cinnamon sticks, nutmeg, and star anise.

Add the sugar and a small amount of the wine.

 

Heat and Infuse

Place the saucepan over medium heat and stir until the sugar is fully dissolved.

Add the remaining wine and gently bring to a simmer (do not boil too vigorously).

 

Simmer

Let the mixture simmer gently for about 10–15 minutes to allow the spices to infuse.

 

Strain and Serve

Remove from heat and strain through a fine sieve to remove spices and zest.

Serve hot in mugs or heatproof glasses.
