These 2 recipes are perfect to create a great combination with cheese. Cooking sauces with wine is a way to enrich your recipes and turn your dishes into unique creations, which will surely be highly appreciated by your guests. Wine sauces are also an excellent solution to dispose of advanced wine or bottled bottoms that always remain in our fridge.

Method:

Onion sauce:

Clean the onion from the peel and then cut it into thin slices, then chomp into small pieces. Put the cutted onion into a pan, add some extra virgin olive oil. Put the pan on the heat and start cooking, stirring occasionally.

Continue cooking for 3-4 minutes, until the onion turns the color into gold. Crumble a chili pepper into the pan (add less or more chili pepper at your choice, if you like spicy or not). Pour half glass of red wine into the pan, add 100 g of sugar. Continue cooking for 15-20 minutes at low heat and the sauce will caramelize.

 

Strawberries sauce:

Clean the strawberries from the leaves and cut them in 4 parts, then cut them again in small slices. Add the strawberries into the pan, add the salt and pepper. Wait until they become tender, add half glass of vernaccia white wine, cook until the wine is completely drained. Let it cool, add the balsamic vinegar at your choice.

Ingredients:

FOR ONION SAUCE (2 servings)

  • 1 red onion

  • 1 chili pepper

  • half glass of red wine (Vino Nobile di Montepulciano)

  • 100 g sugar

  • extra virgin olive oil

FOR THE STRAWBERRIES SAUCE (2 servings)

  • 5-6 strawberries

  • extra virgin olive oil

  • salt to taste

  • pepper to taste

  • half glass of white wine (Vernaccia di San Gimignano)

  • balsamic vinegar
