Barley salad is a cold, healthy and light summer first course! One of those recipes with barley (a cereal low in fat and rich in vitamins) very fast and super tasty! It is boiled al dente and seasoned with fresh vegetables, but you can add any type of vegetable, even grilled.

Fresh and delicious, barley salad is a light and very fast alternative to the classic rice salad, ideal for the whole family!

Method:

Bring the water to a boil, add the barley and cook for 25 minutes.

At the end of cooking, cool it under running cold water.

After cutting all the vegetables into small pieces and adding to the barley. Season and serve.

 

 

Ingredients (4 servings)

  • 1 cup (200 g) orzo barley pasta

  • 2 cups (400 g) cherry tomatoes

  • 2 handfuls finely chopped red onion

  • ½ cup fresh Basil 

  • 1 cucumber

  • 1 celery stalk

  • green olives

  • salt, pepper

  • balsamic vinegar

  • extra virgin olive oil
