Method:
Prepare the curry sauce: mix, in a small bowl, a pinch of salt and the spoonful of curry with the milk. Mix everything well using a hand whisk, taking care to remove all lumps that may form. Put a couple of tablespoons of extra virgin olive oil in a pan and the shallots cut into rounds.
At this point add the diced chicken, mix well and brown it for a few minutes over medium heat. Add the curry sauce, mix well to flavor all the chicken and cook over medium heat.
When the chicken is cooked it will have created a thick scented cream. Turn off the heat before this cream is completely set. Serve hot on its own or accompany it with rice
