Ingredients
- 400 g pasta
- Fresh salmon fillet
- 1 tablespoon tomato paste
- Butter
- 1/2 glass white wine
- Cooking cream
- Fresh parsley, finely chopped
- Salt to taste
Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.
Prepare the Salmon
In the meantime, melt a knob of butter in a pan. Cut the fresh salmon fillet into cubes and sauté for about 5 minutes.
Prepare the Sauce
Deglaze the salmon with white wine and let it evaporate. Add the tomato paste (or fresh tomatoes if preferred) and stir well. Pour in the cooking cream and adjust seasoning with salt if needed.
Combine
Drain the pasta and add it to the pan with the sauce. Toss everything together and cook for a couple of minutes to combine the flavors.
Serve
Serve hot, topped with freshly chopped parsley. Pair with a glass of Vernaccia di San Gimignano for the perfect finish.
