Pandoro with mascarpone cream is a great classic of Christmas tradition in Italy and it is perfect for the whole festive holidays (from Christmas to Epiphany). With this recipe you could present your Pandoro in a complete different way and amaze your guests!

To make this dessert you don’t need special skills, but only a little bit of imagination in the choice of the cream and decorations. You can decide to make your own pandoro at home or, more easier, to buy one at the supermarket, and concentrate on the filing. Pandoro cake with mascarpone cream can be prepared in few minutes, only at the last second before the dinner and it’s the perfect surprise to end a festive menu.

Method:

First step: prepare the cream!

Separate the egg whites from the yolks by placing them in two bowls.

Beat the egg whites until stiff with the help of an electric mixer. Then beat the egg yolks together with the sugar until you obtain a light and frothy mixture.

Then add the mascarpone and continue to beat until the ingredients are well blended. Add the egg whites to the mixture of yolks, sugar and mascarpone, stirring this time with a spatula from the bottom up to not disassemble everything.

Once the cream is ready, cut the pandoro into several horizontal slices (about 3cm thick) and distribute the cream between one layer and another, asymmetrically overlapping the slices to create stars. When you have finished and reached the top of the pandoro, dust with powdered sugar.

Decorate as you like with chocolate chips, black cherries or other fruit.

  • 3 tablespoons of vanilla sugar
  • 500 gr of mascarpone cream
  • chocolate chips or other decorations
  • powderer sugar
