Spaghetti with meatballs are the symbol of Italian-American cuisine. They come from the traditional recipes of southern popular cuisine where meatballs are used to be added in pasta with sauce. The dish was subsequently brought to the United States and in particular to New York, where the recipe known today was born.

Method:

To make spaghetti with meatballs, finely chop the onion, together with the leaves of a bunch of parsley. In a bowl, mix it with the minced meat, the egg and the boiled peeled potato.

Salt and pepper the dough, then make a dozen of small balls like walnuts with it. Flour them and fry with 5 spoonfuls of olive oil. When they are golden brown on all sides, pour the tomato puree and 2 tablespoons of concentrate into the pan. Add 2 basil leaves, salt, pepper and simmer until the sauce has thickened.

In the meantime, put on the fire abundant water for the pasta, salt it to the boil and cook the spaghetti al dente. Drain them, pour the spaghetti into the pan and sauté for a minute with the sauce and the meatballs.

Serve with abundant chopped basil, while a sprinkling of parmesan or grated parmesan is optional.
