Pears Poached in Red Wine

Ingredients

  • 4 large pears
  • 100 g sugar
  • 1 cinnamon stick
  • Zest of 1 orange (preferably untreated)
  • 1 bottle red wine
  • Cloves
  • Star anise

Instructions

 

Prepare the Pears

Peel the pears, trim the base so they can stand upright, and carefully remove the cores.

 

Prepare the Base

In a saucepan, combine the pears with the sugar, cinnamon stick, cloves, star anise, and orange zest.

 

Cook in Wine

Pour in the red wine until the pears are fully covered. Bring to a boil, then reduce the heat and simmer gently for about 25 minutes.

 

Reduce the Sauce

Once the pears are tender, remove them from the pan. Continue cooking the remaining liquid until it reduces into a rich, aromatic sauce.

 

Serve

Serve the pears warm or at room temperature, drizzled with the red wine sauce.
